Soups are one of the easiest meals to make.
When my mother visited when my children were small,
she would always have a steaming bowl of homemade soup
waiting for them when they returned home from school or play.
They still remember this and now my grandchildren can't wait to have
Oma Soup- as they call it!

For example:

Gulasch Suppe
If you have a few ladlesful of gulasch left-
add about half again as much water,
a little salt, and beef base or bouillion cubes.
Bring it to a boil.
Thicken it with 1/2 cup flour that has been mixed with 3/4 cup water.
Season to taste.

Gemüse Suppe
A good way to use up leftover vegetables
is to turn them into soup.
For a bowlful of veggies use 1 quart of water and 5 bouillion cubes.
Bring everything to a boil- and voila-it's soup.
You can make it more filling by adding Nockerln,
or by making what my mother calls

"Eingerührtes".
Whisk together 1 egg and 1/4 cup flour.
Drizzle this mixture slowly into the simmering soup and stir.
It's quick and simple to do but it tastes great.
Even my nephew who is a very fussy eater loves this.

If you're making broccoli with dinner,
buy a little extra and make
Cream of Broccoli Soup.
You will need: 3 large, fresh broccoli stems with florets
salt to taste- 1/4 cup butter- 1/2 cup flour- 1/4 cup light cream,
dash of pepper, 1 tsp. beef base.

Slice the broccoli into separate stalks.
Remove the florets and chop the stalks into 1" pieces.
Put everything into a pan and add enough water to cover it.
Add salt and cook on medium heat until it is tender.
Cool it until it's cool enough to handle the broccoli.

Don't throw out the water!

Chop the broccoli into bite sized pieces.
Melt the butter in a skillet.
Whisk together 2/3 cup of the broccoli water and 1/2 cup flour.
Whisk this into the melted butter.
Bring the reserved broccoli broth to a boil
and whisk the flour mixture into it.
Cook until it thickens, whisking continually.
Add the broccoli.
Add pepper and beef base to taste.
Add the cream.
