Rindfleisch Suppe mit Nockerln
Beef Soup with little dumplings

2 stalks green onions- cut into 4 pieces
2 carrots- cut into 1" pieces
1 celery stalk- cut
1 pound beef- cut into small pieces
2 beef bouillion cubes
Put everything into a pot, add enough water to cover.
Skim off the foam that collects on the top when it starts to boil.
Simmer until the meat is tender- about 1-1/2 to 2 hours.
Strain out the vegetables and the meat- put the broth back into the pot.
Season the broth to taste with salt and bouillion cubes.
Cut carrots and celery into small pieces and add them along with the meat to the broth.
Discard the green onions.
Serve with
Nockerln

4 cups flour
1/2 tsp. salt
4 eggs
Whisk everything together.
Drop by tablespoonsful onto the boiling soup.
Cover and simmer for 5 to 10 minutes.
