Potato Salad
Everyone loves my mother's version of Swabian Potato Salad.
After my parents fled from Czechoslovakia they settled in Swabia (Schwabenland).
Like in the US, the cuisine differs from area to area.
It is made with vinegar as the german potato salad we are used to
but she adds beef broth to give it that extra good taste.
4 large, boiled potatoes,
cooled, peeled and sliced thin
1 finely chopped small onion
1 diced pickle
Mix together:
2 tsp. wine vinegar
2 tbsp. Grey Poupon
3 tbsp. oil
1/2 cup water with 1 tbsp. of beef base
1/4 tsp. sugar

Pour the liquid mixture over the potatoes and mix well.
Add the eggs and pickles and mix again.

This is best if prepared 6- 8 hours ahead of time.
